I have said it many times: if I have to pick one food to live on for the rest of my life, it would be potatoes! Any vegan shape or form! Absolutely my favorite. This Creamiest and More Nutritious Mash Potato Recipe is super easy to make and contains more nutrients.
You might ask, Nutrients? From potatoes? How?
In the defense of potato
Let's be honest, potatoes have a very bad reputation. Its high carbs! really fattening! stay away from it! Poor potato, we remove the most nutritious part by peeling, draining and then deep fry it.
It's like victim blaming.
Potatoes provide essential micronutrients, including vitamin C, vitamin B6, potassium, folate, and iron, and they also add a substantial amount of fiber to the diet. Read from Source
When potatoes are boiled, water-soluble nutrients like vitamin C and potassium are lost, dissolving in the cooking water making the potatoes less nutritious. These nutrients are lost when we drain the cooking water. Also, the more you boil, the more nutrients are lost. Cooking potatoes with their skin on helps preserve some of the water-soluble nutrients.

To prevent this loss of nutrients, in this recipe we only use the minimum amount of water to cook. As an option, to preserve more nutrients you may was potatoes thoroughly and leave skin on as well, which will preserve fiber content.

Ingredients
Serves 4
1 kg potatoes
3/4 cups of soymilk
2-3 tbsp vegan butter/butterish or olive spread
salt and pepper to taste
Instructions
Peel and dice potatoes. Add water, so it’s not completely covering it only between 1/2 to 3/4 of top of the potatoes. Add salt.
Cook it covered for around 10 minutes and check how soft it is. Stir it a couple of times, so every part of the potatoes is covered with water at some point. When it’s nearly done and only need 5 minutes, add soymilk butterish and carry on cooking uncovered. Stir potatoes, to make sure previously uncovered parts are now under water.
The water should evaporate and only a little left. When the potato is soft, mash it using a potatoes masher until it becomes light and smooth.
