Be sure to soak or thoroughly was brown rice before cooking to remove antinutrients that might inhibit absorption of other nutrients!

So let's get started!
Ingredients:
1 cup whole grain rice
2 cups water
2 cups soy milk
1/4 cup sugar (or to taste)
2 tbsp sultanas
1 tsp vanilla extract
A pinch of salt
1 ripe mango, peeled and diced
2 Lemon rind
Instructions:
Soak or rinse the whole grain rice under cold water until the water runs clear. Why?
In a medium saucepan, combine the rice and water. Bring to a boil over medium heat. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the rice is tender and the water is absorbed.
In the meantime, blend the mango and mix with 1 lemon rind. Divide and ladle it in to 4 large bowls.
Add the soy milk, sugar, sultanas, vanilla extract, and a pinch of salt to the cooked rice. Stir well to combine. Cook over low heat, stirring frequently, until the mixture thickens to your desired consistency (about 15-20 minutes). Remove from heat, stir in the other lemon rind and let it cool slightly.
Top the mango with the cooked rice. Serve warm or chilled, garnished with additional mango pieces or with other fruits like apple and strawberry if desired.
