Savor the lively tastes of Greens with Herb Oil. Discover a delightful recipe that includes green beans, broccolini, and a fragrant herb-infused oil. This dish is incredibly simple to make, refreshingly fresh, and pairs well with any main course or can be served alongside items like tofu, legumes, or carbohydrates such as potatoes.
Similar to broccoli and other cruciferous vegetables, broccolini is rich in fiber. It also provides protein, potassium, and vitamins A, C, E, and K, along with trace amounts of calcium and iron. (Source)
Conversely, green beans are rich in vitamins and minerals and may appear to be a typical vegetable, yet their nutritional value is outstanding. Among the benefits, green beans are a great source of vitamin K, essential for bone health. Their high fiber content aids digestion and supports beneficial gut bacteria. Ingredients
200 g fresh green beans
1 bunch Broccolini
1 tbsp Olive oil
1/2 tbsp Thyme
1/4 cups chopped Parsley
1 tbsp crushed Walnuts or almonds flakes
Salt and pepper to taste
Instructions
Steam or microwave beans and broccolini (2 minutes). Be sure to leave it crunchy.
If you chose to microwave it, add some water to the plate, even if it's a flat plate. Then, wash with cold water. Arrange it on a serving platter.
Chop parsley and mix it with thyme and olive oil. Pour this over vegetables. Chop walnuts and sprinkle it over.
Optional: squeeze fresh lemon juice on.
