Coated bread with celery salsa

This coated bread with celery salsa is delicious, healthy and easy to prepare. The bread is dipped in soymilk and nutritional yeast mixture for extra B12.  Use fresh herbs of your liking. I love parsley, so I used that. But experiment with coriander or basil, etc. 

Ideal for breakfast. Have a nice glass of orange juice with it!

Ingredients

Topping:

1/2 Purple onion

Large handful of garden herbs, I used parsley and coriander 

1 tbsp Apple cider vinegar

Bread, 

4 Slices of wholegrain bread

100 +ml Soy milk 

1 tbsp Nutritional yeast 

1 tsp Garlic powder

1 tbsp Olive oil

2 tbsp Pumkin seed

Instructions:


Chop finely purple onion and garden herbs. Mix with ACV.


Preheat oven to 200 degrees.


Mix soymilk with garlic powder and Nutrional yeast. Place it in a large flatter bowl. Place bread in so it can soak some up, turn it over so both sides are covered.

Immediately place bread on baking tray and brush it with olive oil. Bake it for 10-15 min until golden brown and crispy. 


Serve it with toppings and sprinkle pumpkin seeds on top.
