This is another potato dish of mine, but it's a more elegant version and perfect for impressing others while sharing our love for potatoes.

Makes 9 small stacks


Ingredients

2 tbsp extra virgin olive oil

2 onion cleaned and sliced

1 tbsp Balsamic vinegar

200 g potatoes, sliced thinly (2-3 medium potatoes, washed)

1 tsp liquid smoke

1/3 cup vegetable stock

1 tbsp dried thyme


Preheat oven to 180 degrees.


Instructions


Warm a frying pan, add the sliced onions, and drizzle with balsamic vinegar. Cook until they turn golden.


Place a 2-3 slices of potatoes into each cupcake tin. Next, distribute half of the onion on top of the potato layer. For the next layer add the remaining potatoes and top with the rest of the onion.


Divide and pour the stock and olive oil in the cupcake tins. Cover with aluminum foil bake for 30 minutes. Remove the foil and bake for another 20 minutes. Check if its tender and bake for another 10 minutes if needed.
