Beetroot and Vegan Feta Slice

This Beetroot and Vegan Feta Slice doesn't just look amazing, but it has a very special flavor. It can be a centerpiece of any festivities, entertaining or just weekend family meals.
You may use a variation of beetroot. In fact, the more Colors you can buy, the more distinctive this dish will be. Certainly, it is very memorable for everyone.
This recipe needs to be set in the fridge overnight, so you will have to start the previous day before serving. I actually really like aspect, as I can prepare this in advance, less to worry before entertaining.
Ingredients
Around 3 large beetroot or 6 smaller ones 600 grams.
A handful of mixed herbs: dill, parsley, and chives.
1 tbsp garlic puree
1 tbsp dried oregano
400-500 g vegan feta

Instructions
Preheat the oven to 200 degrees.
Clean the Beetroots cut off the leaves and roots. Wrap it in aluminium foil and bake it in the oven for one hour. You may do this step the day before.
In the meantime, mash feta cheese with a fork. Mix it with the chopped herbs.
Line a 10 by 20 centimeter rectangular baking thin with cling wrap. Try to use home compostable ones or other environmentally friendly alternatives.
Once the beetroot is cool, peel it and slice it to about five millimetres thickness.
Now you have to layer the tin with the beetroot and feta mix. Start with the beetroot on the bottom try to select the nice round ones because this is going to be the top of the terrain. Make it look nice!
Dance layer of fat of cheese mix making sure that all the gaps are feared and there is a thin layer on the beetroot as well. Lay down another layer of beetroot and fet on it.
Cut some beetroot half, and put those on the edge with the straight side outwards, so its evenly distributed and the edge has Beetroots well.
Repeat these layers until you use up the beetroot and feta mix.
Cover the top weight cling film. And place it in the fridge over overnight to let it set.
