Beetroot and Tomato Puree Soup

Ingredients
One onion chopped

1 clove of garlic
3 tbsp of olive oil
1 can of tomatoes
200 grams of beetroot peeled and halved.
2 cups of veggie broth
1 tsp of salt
1 handful of sweet basil or other herbs, like dill or parsley.
Instructions
Heat the olive oil in a pan, add chopped onion ang garlic. Fry until translucent.
Add remainder Ingredients except herbs.
Cook on low for one hour (you may turn it up and cook it for half an hour if you are in a rush)
Add basil, boil it and blend.
All set! Enjoy!
Try this soup with dill instead of basil.
